Hairdresser shares apple cake recipe

In The Kitchen with Sharon this week is Caroline Osborn, owner and operator of Wild Mane Salon in Hillsboro. Anyone that knows Caroline knows that not only is she a great hairdresser, but a great cook. We always share recipes each week while she does my hair. Last week we talked about apples. Caroline remembers when she and her mom had lots and lots of apples. They made every thing from applesauce to apple cake, which Caroline graciously agreed to share the recipe for with all of us this week.

WASHINGTON APPLE CAKE

Ingredients — 3 eggs , 2 cups sugar, 1 cup oil, 2 cups flour, 2 teaspooons cinnamon, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon vanilla, 1 cup chopped walnuts, 5 cups thinly sliced tart apples, with one of the cups of apples reserved for garnish.

Preheat oven to 350 degrees. Beat eggs with mixer until thick and light. Combine sugar and oil and pour into the eggs with mixer on medium speed. Stir together flour. Add cinnamon, soda and salt to mixture. Add vanilla and mix well. Stir in walnuts. Spread apples in buttered 13-inch, by 9-inch by 2-inch pan. Pour batter over apples, spreading to cover. Bake 1 hour. Remove from oven. Cool, then spread with icing. Refrigerate till serving. Garnish with additional apples slices. Should make 12-15 servings.

Cream Cheese icing — 2 packages (3 oz. each) cream cheese. Beat until fluffy. Beat in 1/4 cup melted butter, then beat in 2 cups confectionarry sugar and 1 teaspoon lemon juice. Spread over cool cake.
